This was my Saturday.
I woke up this morning craving soup because I am a full-blown soup fiend… especially chicken soup. So I made a quick chicken and lentil soup with fresh roasted chicken, red lentils, onions, celery, carrots, and even a tiny bit of corn. Honestly, a lot of my soups end up becoming a “what’s left in the refrigerator” situation anyway, and somehow that always makes the broth better.
I had too much chicken, so I also made a quick little chicken salad. Then I decided I wanted salmon salad too, so I made a small batch of that as well.
The good part is both salads use pretty much the same base ingredients, so I just chopped up extra celery and onions once and used them for both. I even tossed in some pea shoots (micro pea greens) I had sitting in the refrigerator. I knew they would come in handy somewhere.
Now I’ve got two little containers of salad, a nice pot of soup, and enough food to carry me through the next couple of days. I can pair the soup with a salad, or throw the chicken salad or salmon salad over lettuce and tomatoes. Add a handful of chips on the side and I’m good.
And honestly? That is my happy Saturday afternoon.
P.S. For anyone wondering what was in the soup: bone broth, roasted chicken, carrots, onions, celery, pea shoots, garlic, a bit of corn and red lentils. Season it however you like, use what you have, and enjoy.
The salads were simple too — chicken and/or salmon, onion, celery, Old Bay seasoning, garlic, a little salt, and a touch of heat from crushed red pepper. Subject to change depending on my mood. 😊🔆
